Method
1. Sift 150g flour into a large mixing bowl. Make a small well in the centre and crack in your egg and roughly half of the milk. Use a whisk or wooden spoon and mix to a thick, smooth batter then gradually stir through the rest of the milk until well combined.
2. Add a table spoon of oil or butter to a non-stick pan, just enough to cover the bottom. Heat on high until hot then turn down to a medium heat.
3. Pour approx. 20ml spoons of batter into the pan. This should make pancakes about 4cm in diameter. Leave each pancake for about 40 seconds or until golden brown. Bubbles will appear on the surface and the mixture will start to set. Flip each pancake over using a palette knife or spatula and leave for another 40 seconds.
4. Once cooked, transfer to a wirerack or some kitchen roll.
5. Whilst cooling, peel and slice the Bananas and slice the Strawberries. Take 3 skewers per person and skewer the mini pancakes and the fruit onto a skewer, alternating between the mini pancakes and fruit.
Serve with a drizzle maple syrup.
