Chicken Tikka Flatbread 

These spicy, flavour-filled flatbreads are an easy picnic food idea that you can throw together in minutes. Packed with simple, yet delicious, ingredients, including tangy chicken tikka, fresh salad and drizzled with cooling sauces, your family will devour this refreshing summer treat when the weather gets warmer.

Ingredients

  • Packet of Tikka mini fillets
  • Pack of luxury flatbreads
  • Bag of florets baby leaf and rocket
  • 1 red onion finely sliced
  • 1/2 cucumber sliced into sticks and 1/4 of the cucumber cut into matchsticks
  • Packet of cherry tomatoes
  • Mango chutney
  • Yogurt and mint sauce

Method

  1. Warm the flatbreads in the microwave for 30 seconds so you can fold them in half lengthways.
  2. Fill with a handful of salad leaves.
  3. Add a few slices of chicken tikka, cucumber matchsticks and halved cherry tomatoes and sliced onions.
  4. Finish with mango chutney and a drizzle of yogurt and mint sauce.

Grilled Pizza Sandwich 

Even your fussiest picnicker will want second helpings of these cheesy grilled pizza sandwiches. Simply layer thick slices of tiger bloomer with all your mouth-watering Italian favourites, including pepperoni, salami, mozzarella, spinach and tomatoes. Griddle until they’re exactly how you want them, then pack away to enjoy later.

Ingredients

  • 6 slices of thick tiger bloomer
  • 3 tbsp of Tomato purée
  • 1 packet of pepperoni
  • 1 packet of German salami
  • 150g of grated mozzarella
  • 1 buffalo mozzarella ball sliced
  • 100g of baby spinach
  • 2 salad tomatoes sliced
  • 3 tbsp of sriracha Mayo

Method

  1. Divide the tomato purée between 3 slices of bread.
  2. Place the pepperoni, salami, mozzarella slices and grated mozzarella followed by the tomato and spinach on top of the puréed slices of bread.
  3. Spread a little sriracha mayo on the remaking slices of bread and top each sandwich.
  4. Heat a dry griddle pan and toast each sandwich.

Fruit Cones 

No summer picnic is complete without sweet treats. That’s why our ideas don’t stop with the savoury – these fruit cones are easy to create and make great picnic food. This recipe combines waffle cones, melted chocolate and a selection of juicy summer fruits, for a refreshing dessert everyone will adore.

Ingredients

  • Pack of 10 waffle cones
  • 100g of melted chocolate
  • 100g of Greek yogurt
  • 200g blueberries
  • Punnet of strawberries
  • 1 mango finely sliced and cubed
  • 3 kiwi fruits skinned and sliced
  • 2 salad tomatoes sliced
  • 100g of seedless grapes halved
  • Handful of chopped nuts of choice
  • Sprinkles of choice

Method

  1. Dip the cones in the melted chocolate and sprinkle on a few nuts ( we used pistachios and hazelnuts ) or sprinkles of choice.
  2. Fill the cones with the sliced fruit.
  3. Add a spoon full of Greek yogurt and finish with a drizzle of honey or chocolate sauce.
