Aubergine Parmigiana is one of the most iconic Italian dishes that everybody should try. The ultimate vegetarian dish prepared with fried aubergine slices, just the way my mother used to do it. Traditionally cooked in the oven so the mozzarella oozes from the layers with Pecorino cheese sprinkled all over

When I'm at home, you will often find me in the kitchen creating my favourite Italian meals, many of which are featured in my cookbooks and television shows. But here's my secret... I often freeze them, so my family can enjoy real Italian food whenever they want to. How to cook

Defrost

Defrost this dish in a refrigerator for 12 hours.

Once defrosted keep refrigerated and use within 24 hours.


Oven Defrost

Fan 200°C Cook time: - 35 min.

Gas 6

Pre-heat for 10 minutes.

Remove outer carton and plastic bag.

Place onto a baking tray and cook in the middle of the oven for 35 minutes.


Oven Frozen

Fan 200°C Cook time: - 45 min.

Gas 6

Pre-heat for 10 minutes.

Remove outer carton and plastic bag.

Place onto a baking tray and cook in the middle of the oven for 45 minutes.


Microwave Frozen

Cook time: - 6 min.

Remove from outer carton.

Do not pierce or remove plastic bag.

Place on a microwaveable plate and cook for 6 minutes.

Stand for 1 minute, return to microwave and continue to cook for a further 6 minutes.

I have enjoyed all of the Gino range with the exception of this dish. It was so salty as to be completely inedible. I couldn't get past the first bite. Such a pity, as the lasagne and cannelloni are delicious.

I’m not usually picky but this was the most disgusting ready meal I’ve ever tasted. The aubergine was soggy and mushy, there wasn’t much substance to it as the whole thing just fell apart and swam in the tomato sauce. The cheese tasted cheap & burnt even though it wasn’t and I just had an overwhelming taste of vomit. Never ever again. Sorry.

Superb frozen meal. The best I have ever had tbh.

I don't need to fly back home to Italy when I miss my melanzane alla parmigiana. This meal is prepared by a top quality frozen food company in Liguria and is incredibly close to what an Italian expects from a homemade meal. Congratulation to Gino for this amazing recipe.

Wasn't sure if I'd like this but how wrong I was, very nice and will definitely buy again

I'm italian and I can say this is really lovely and genuine as we would do it. In Italy I've never seen using the soffritto in the tomato sauce but it's actually quite tasty and not too greasy. The aubergine had a lot of seeds, but not annoying and quite soft. The taste was great, the odour of aubergine parmigiana in the house even more. The cheese crust on the top is heaven, we cooked it defrosted in the middle shelf of the oven. We also had it on the top of the tomato flatbread of the same line by Gino d'Acampo and it's amazing, tastes exactly like a parmigiana pizza I would have in Naples. Great price for the portion that is quite heavy to eat all in once up to me. Thank you Gino for bringing a little piece of Italy in the UK!
