I was a little worried about trying this lamb mince. It is 51% lamb and 49% mutton (which doesn't bother me) and the 'connective tissue' content seemed a bit high. But, it was more the look of the product that put me off - i.e. frozen pellets of meat. I shouldn't have worried. I fried it from frozen and, as it defrosted in the pan, it turned into perfectly normal mince. Unlike mince I have frozen at home and then defrosted, it didn't end up 'stringy'. I used it in a Shepherd's Pie which was delicious with great depth of flavour (probably because of the mutton). I'll certainly buy this again.
