Aubergine Parmigiana is one of the most iconic Italian dishes that everybody should try. The ultimate vegetarian dish prepared with fried aubergine slices, just the way my mother used to do it. Traditionally cooked in the oven so the mozzarella oozes from the layers with Pecorino cheese sprinkled all over

When I'm at home, you will often find me in the kitchen creating my favourite Italian meals, many of which are featured in my cookbooks and television shows. But here's my secret... How to cook

Oven Frozen

Fan 200°C Cook time: - 45 min.

Gas 6

Pre-heat for 10 minutes.

Remove outer carton and plastic bag.

Place onto a baking tray and cook in the middle of the oven for 45 MINUTES.


Microwave Frozen

Cook time: - 12 min.

Remove from outer carton.

Do not pierce or remove plastic bag.

Place on a microwaveable plate and cook for 6 MINUTES.

Stand for 1 minute, return to microwave and continue to cook for a further 6 MINUTES.

PLEASE BE CAREFUL WHEN OPENING THIS PRODUCT AS THERE MAY BE A BUILD-UP OF STEAM.


Defrost

in a refrigerator Cook time: - 12 hr.

Defrost this dish in a refrigerator for 12 hours.

Once defrosted keep refrigerated and use within 24 hours.

This is quite different, with a pesto taste. Nice, interesting meat-free option.

This tasted horrible an it ended up in the bin. The aubergine was tender but the actual sauce was not nice at all.

Really yummy. Hope the rennet is vegetarian though.?

Too much sauce for my liking and the tomato taste takes over! The aubergine was cooked through. More cheese please.

Just a like my mamma used to make. No really mum was Italian, and this was delicious, just like she made it. I loved it, but her cheese sauce was more like you find on lasagne. Having said that the dish was fantastico. I ate as a main meal it sure filled me up. I think for a starter you could share one for two people. If you have never eaten aubergine before this is a good way to be introduced to it. I shall certainly be buying this again.

Really surprised at how tasty this was, I had it with the garlic and provola flatbread which just made it all the more tasty!
