Ostrich Fillet Diane

Our ostrich fillets are ready in minutes, ideal for a quick snack or alternative dinner idea! They’re also low in saturated fat and high in protein.

  • 500g frozen ostrich fillets
  • 750g frozen Iceland oven fries
  • 20g salted butter
  • 100g frozen whole leaf spinach
  • 50ml brandy
  • 284ml double cream
  • 100g frozen white onion
  • 125g button mushrooms
  • ¾ bulb garlic
  • 100ml white wine
  • ½ lemon
  • 2 frozen cubes of parsley
  • 30g Dijon mustard
  • 30ml Worcestershire sauce
  1. Slice the mushrooms and garlic & finely chop the onion.
  2. Fry the onion & garlic until soft, add butter & mushrooms.
  3. Add brandy & flame, then add white win and reduce by half.
  4. Add cream, mustard & Worcestershire sauce, reduce to a light consistency. Season with salt & pepper.
  5. Defrost ostrich fillets overnight in the fridge. Slice fillets in half, lightly oil & season with salt & pepper.
  6. Warm spinach with butter, season with salt & pepper.
  7. Place fries onto oven tray and bake for 18-20 minutes at 200°C.
  8. Pan fry ostrich for 1 minute each side, add sauce & stir in parsley. Place spinach in middle of plate with 2 fillets on top, spoon over mushroom sauce.
