A simple fish supper made extra-special with a crunchy, lemony breadcrumb pesto crust. Best of all, you can prepare the crunchy crumb topping ahead of time.

- Preheat the oven to 220°C.
- Place the frozen salmon fillets on a baking sheet lined with non-stick baking paper and bake in the oven.
- In the meantime mix together the rest of the ingredients.
- After the salmon has been in the oven for 10 minutes, divide the mixture into quarters and spread carefully over the top of each salmon fillet.
- Bake for a further 20 minutes until cooked through.
- Serve the salmon with roasted Mediterranean style vegetables or simply new potatoes dressed in butter and lemon juice (from the zested lemons).
