Pesto Lemon Salmon

A simple fish supper made extra-special with a crunchy, lemony breadcrumb pesto crust. Best of all, you can prepare the crunchy crumb topping ahead of time.

  • 4 Salmon Fillets, frozen
  • 80g Green Pesto
  • Zest of 2 lemons
  • 60g fresh breadcrumbs
  • ½ teaspoon black pepper
  1. Preheat the oven to 220°C.
  2. Place the frozen salmon fillets on a baking sheet lined with non-stick baking paper and bake in the oven.
  3. In the meantime mix together the rest of the ingredients.
  4. After the salmon has been in the oven for 10 minutes, divide the mixture into quarters and spread carefully over the top of each salmon fillet.
  5. Bake for a further 20 minutes until cooked through.
  6. Serve the salmon with roasted Mediterranean style vegetables or simply new potatoes dressed in butter and lemon juice (from the zested lemons).
