Oven Baked Seabass

Made using seabass fished from the pristine clear waters of the Aegean Sea, and the simplest ingredients, this dish is sure to be a hit.

  • 900g Arctic Royal frozen seabass fillets
  • 350g frozen crispy potatoes
  • 100g mixed olives
  • 520g cherry tomatoes
  • 150g frozen white onion
  • 2 lemons
  • ½ bulb garlic
  1. Defrost seabass overnight in the fridge, pat dry & mix with lemon zest, olive oil & rosemary.
  2. Fry the onions & chopped garlic until soft, add olives, tomatoes & rosemary.
  3. Place potatoes in pre heated oven (200°C) for 8 minutes.
  4. Add the cooked potatoes to tomatoes, onions, olives & rosemary.
  5. Using a greaseproof lined dish arrange fish in the middle, with the potato & tomato mix around then season with salt & pepper.
  6. Cook in pre heated oven (210°C) for 10 to 12 minutes. When cooked finish with a squeeze of lemon.
