This quick and easy Vegetable Curry is packed full of healthy veggies to keep the whole family fuller for longer. Everything comes straight out of the freezer or store cupboard too so this is my favourite go-to dinner when there’s nothing in the fridge. And it takes just 10 minutes to cook with zero prep time at all, so it’s perfect for when you’re short on time. See method

What you’ll need

Ingredients

• 1 cup of Iceland Frozen Diced Onions
• 3 blocks of Iceland Frozen Whole Leaf Spinach
• 3 tbsp Curry Paste or Powder
• Iceland Frozen Chopped Garlic
• 4 tbsp of Iceland Greek Style Yoghurt
• 1 tin of Chopped Tomatoes
• 1 tin of Chickpeas
• 2 cups Iceland frozen Green Beans
• 2 cups Iceland frozen Cauliflower Florets
• Tbsp Frozen Coriander
• 1 cup Iceland Frozen Mixed peppers
• Iceland Frozen Steamed White Rice

Method

  1. Heat the oil in the frying pan for 1 minute and add the onions and garlic, stirring fairly frequently for a few minutes.
  2. Add the spinach, green beans, cauliflower and peppers and stir occasionally until the vegetables start to defrost.
  3. Add the chickpeas, tinned tomatoes and curry paste or powder. Stir occasionally for 5-6 minutes until the vegetables are hot.
  4. Sprinkle some frozen coriander into the pan and stir through.
  5. Serve with Iceland Steamed White Rice and a dollop of yogurt. For some extra heat, top with chopped fresh chilli!
