A rainbow birthday cake is the perfect surprise for your little one’s big day. Kids of all ages will love the bold colours and edible clouds. It’s a party showstopper that is sure to make your birthday superstar very happy. Our rainbow birthday cake is easy to bake and can be ready in less than two hours. For The Cake

  • 400g sugar
  • 400g Stork at room temperature
  • 400g self-raising flour
  • 8 eggs
  • 4 tbsp milk

For The Buttercream

  • 100g Stork
  • 140g Buttercream
  • 125g Jam

For The Decoration

  • 2 bags Haribo Chamallows pink & white marshmallows
  • 100ml milk
  • 2 bags Skittles sweets

  • Greaseproof paper
  • Large mixing bowl
  • Measuring spoons
  • Scales

  • Palette knife

  • Wooden spoon

Method

  1. For the cake, preheat your oven to 180°C / gas mark 6 and grease your two 20cm cake tins, lining the bases with greaseproof paper.
  2. In a large bowl, beat the sugar and Stork together. You can then add your eggs in one at a time until fully combined.
  3. Gently fold in the self-raising flour, before adding in 4 tablespoons of milk.
  4. Bake on the middle shelf of the oven for around 40 minutes – the sponge should be golden and springy to the touch.
  5. Allow to cool for a few minutes in the tins, then turn out on to a wire rack where it can cool completely.
  6. For the buttercream, while your rainbow birthday cake sponges are cooling, get a bowl and beat together 100g Stork and 140g icing sugar until smooth.
  7. Use your palette knife to spread jam on the bottom sponge, followed by a layer of buttercream. Then, sandwich your two cakes together.
  8. Place back on to the wire rack, with a tray underneath, and start preparing your decoration.
  9. For the decoration, pick out 8 white Haribo marshmallows and tear them into chunks. Set them to one side as these will make the clouds.
  10. Place all the remaining white marshmallows from both Haribo Chamallows packets into a saucepan.
  11. Add 100ml of milk to the marshmallows and place on a very low heat, stirring continuously until fully melted.
  12. Let it cool slightly, then pour the warm mallow mixture over the top and sides of your cake. Leave to set for 30 minutes.
  13. Once set, add your skittles on top in a rainbow design and cluster the cut-up marshmallow pieces at each end to create clouds. Ta-dah!
