This family-friendly easy Slow Cooker Chicken Curry takes just 15 minutes to prep and is full of loads of vegetables and protein to keep those tummies full! This can be made as mild or as spicy as you like and is a one-pot dish which saves on washing up. What you’ll need

Ingredients

• 450g Fresh Chicken Breast Fillets
• 1 cup of Frozen Iceland Diced Onions
• 2 cups of frozen Iceland Mixed Peppers
• x2 tins of Don Mario Chopped Tomatoes
• 200g Greek Style Natural Yoghurt
• Iceland 6 White Rice Steam Bags
• 2 tbsp Vegetable Oil
• 2 tbsp Curry Paste or Curry Powder (as spicy or as mild as you like)
• 1 OXO Chicken Stock Cube
• Salt and Pepper to taste

Utensils

• Slow Cooker
• Sharp knife and chopping board

Method

  1. Dice the chicken into chunks and pop into the slow cooker with a drizzle of oil and the curry paste or powder, stirring to coat the chicken evenly.
  2. Add in the onions, peppers and tomatoes, before stirring again.
  3. Then, make up a jug of chicken stock as per the pack instructions and tip over everything in the slow cooker before covering with the lid.
  4. Cook on low for 5-6 hrs until the chicken is tender and cooked through.
  5. Just before serving, add in the yoghurt and mix, season the curry with salt and pepper to taste.
  6. Cook the rice steam bags as per cooking instructions and serve with the curry, if you’ve found that you’ve made it too spicy, add in a touch more yoghurt or a squeeze of fresh lime.
