This tasty and easy slow cooker peri peri chicken is made using our favourite Nandos quick marinade. This recipe is a family favourite in my house and is full of loads of hidden veggies for those fussy eaters. Sometimes I find that the slow cooker becomes redundant in the summertime, however this one is perfect for those lighter evenings and al fresco dining! Ingredients

• Iceland Boneless Chicken Thigh Fillets
• 1 cup of Iceland Frozen Mixed Peppers
• 1 cup of Iceland Frozen Diced Onions
• 1 can of Chopped Tomatoes
• 2 tbsp of Iceland Frozen Chopped Garlic
• Iceland Mini Corn Cobs
• Bottle of Nando’s Peri-Peri Quick Marinade
• Iceland 4 Golden Savoury Rice Steam Bags
• 1 Chicken Stock Cube

Utensils

• Slow cooker
• Frying pan

Method

  1. Pour the peri peri sauce over the thigh fillets, coat well and set aside.
  2. Place a large non stick pan over a high heat and sear the chicken thighs on both sides for 3 minutes.
  3. Add 200ml water to the plan and simmer for another 2 minutes on high before transferring to the slow cooker.
  4. Add the onions, chopped tomatoes, stock cube, peppers and garlic and cook on high for 2 and a half hours. Add more water or marinade if it ever starts to look a too dry.
  5. Then, 30 minutes before dinner time, place the corn cobs on top of the chicken in the slow cooker. Place the lid back on and turn them regularly, there’s no need to boil these in a separate pan, save on washing up and let the slow cooker do the work for you!
  6. Finally, pop the golden rice in the microwave for two and a half minutes, then serve in a bowl topped with the chicken stew and corn. Delicious!
