What you’ll need

Ingredients

  • Iceland Chicken Breast Fillets
  • Iceland Gem Lettuce
  • 1 Iceland Avocado
  • Handful of Iceland Cherry, Vine or Baby Plum Tomatoes
  • 4 Rashers Iceland Bacon
  • 2 tbsp Olive Oil
  • Zest and juice of 1 lemon
  • 1 tsp Mixed Herbs
  • 4 Iceland Free Range Eggs
  • Parmigiano Reggiano
  • Caesar Dressing
  • Handful of Maretti Bruschette Crisps

Method

  1. Place the chicken breasts in a bowl and mix with the marinade ingredients until well coated.
  2. Heat a frying pan or griddle and add the chicken breasts and cook on both sides until golden brown and cooked through. Cover and set to one side to rest.
  3. While your chicken is cooking and resting, cook the bacon and boil the eggs.
  4. When you are ready to serve, slice chicken into thick slices, chop up the bacon and slice the eggs.
  5. Arrange on a large plate all the components and finally pour over the dressing and serve. Enjoy!
