Method

  1. Marinade the beef for 24 hours in red wine with the onion, carrot and mix herbs.
  2. Strain and reserve the red wine.
  3. Pat the beef dry. To ensure the beef browns separate the beef from the onions and carrots and pat dry.
  4. Make the stew. First step is cook the beef until brown to ensure maximum flavour.
  5. Cook the bacon ensuring you get all that tasty bacon fat.
  6. Next cook your onions, mushrooms and carrots. Cook all until golden.
  7. Add the tomato paste and cook to take the raw edge off. Then add flour and cook for a minute.
  8. Add your beef stock slowly while stirring so the flour dissolves easily, no lumps! Then stir the reduced red wine in.
  9. Finally, add beef, bacon, thyme and bay leaves, then give it a good stir and bring to a simmer. Now, it’s ready to slow-cook.
  10. Cover pot then place in the oven for 1 hour at 180°C/350°F (160°C fan). Then give it a stir and return to the oven for a final 1½ hours until the beef is tender.
  11. Serve along side some fluffy mash potato and enjoy your delicious beef bourguignon.
