Italian Sea Bass Parcels

A ridiculously easy and nutritious dinner that tastes sumptuous. The sea bass is baked in a foil parcel so it steams in its own juices and keeps all the flavour. Perfect served with couscous, new potatoes or a crisp green salad.

  • 4 sea bass fillets, frozen
  • 4 tablespoons olive oil
  • 2 lemons
  • 4 garlic cloves, peeled and crushed
  • 4 tablespoons finely chopped fresh parsley
  • 4 tablespoons finely chopped fresh basil
  • 32 cherry tomatoes, on the vine if possible
  1. Preheat the oven to 200°C/Fan 180ºC/Gas Mark 6. Cut 4 pieces of foil, 4cm longer than the fish fillets and triple the width.
  2. Place a fillet in the centre of each piece of foil, and on top of each drizzle 1 tablespoon olive oil, the juice of half a lemon, 1 garlic clove, ½ tablespoon parsley, ½ tablespoon basil and 8 cherry tomatoes.
  3. Seal the parcels by folding the foil over and scrunching it tight, leaving some air above the fish to allow it to steam.
  4. Bake in the oven for 25 minutes until the fish is cooked through.
  5. Cooking times may vary according to how thick the fillets are; the thicker the fillet, the longer the baking time.
  6. Serve the fish sprinkled with the remaining parsley and basil.
