Parmesan Crusted Chicken

Who knew that a simple jar of mayonnaise could transform chicken breasts from an often somewhat unimaginative dinner into something succulent and flavorsome? This recipe is just a template – try whatever herbs and cheese you prefer, just make sure to keep a quarter of the cheese as Parmesan or Grana Padano – it really bolsters the cheesy flavour.

Method

  • 4 chicken breast fillets, frozen
  • 150g mayonnaise
  • 1 garlic clove, peeled and crushed
  • 60g parmesan cheese, grated
  • 1 teaspoon English mustard
  • 1 tablespoon thyme leaves
  • ½ teaspoon freshly ground black pepper
  1. Preheat the oven to 200°C and line a roasting tray with non-stick baking paper.
  2. Place the chicken breasts on the tray and cook from frozen for 25 minutes.
  3. Mix together the rest of the ingredients, except for 20g of the cheese.
  4. Remove the chicken from the oven and divide the mixture equally between the chicken breasts, carefully smoothing it over the top with the spoon. After that, sprinkle the remaining cheese on top.
  5. Roast for a further 25 minutes until cooked through.
  6. Serve with roast potatoes and carrots.
