Ginger & Garlic Pork Stir Fry

Sometimes the simplest combination of flavours can be the most moreish. Soy, garlic and ginger, mixed together with a little honey; it’s an easy marinade to whip together quickly, and it works equally well with pork or chicken.

  • 2 tablespoons dark soy sauce
  • 3 garlic cloves, peeled and crushed
  • 1 teaspoon ground ginger
  • 2 teaspoons runny honey
  • 330g pork loin steaks, trimmed of fat and cut into strips
  • 185g frozen broccoli
  • 2 tablespoons vegetable oil
  • 1 red pepper, deseeded and cut into strips
  • 8 spring onions, roots removed and sliced into approximately 2cm chunks
  1. Make the marinade by stirring together the soy sauce, garlic, ginger and honey in a bowl, or pour into a freezer bag.
  2. Add the pork strips and leave to marinate in the fridge for 10 minutes.
  3. Boil the broccoli florets for 5 minutes, then drain.
  4. Heat the oil in a wok or large frying pan over a very high heat.
  5. Once it’s sizzling hot, add the pork and marinade.
  6. Move the pork around the wok/pan and after 2 minutes add the pepper strips, broccoli and spring onions – in that order.
  7. Keep stir frying, moving the pork and vegetables around the pan for another 5 minutes.
  8. Serve the pork with steamed rice or noodles.
